history:
Since 12th century fermented Rosebay Willowherb, (Chamaenerion angustifolium) tea was a traditional Russian hot beverage renowned for its health properties and generally wholesome effects. It is a caffeine-free tea that does not contain harmful uric acid or oxalate. Willowherb tea is also a mild sedative. In 17th century it gained huge popularity until toward the end of the 19th century it began losing ground to the Indian and Chinese teas. In Russia it was also called “Bogatyr’s Tea” or “Boyar’s Tea” and was very popular among both peasants and nobles. The tea was successfully exported to Europe, where it was known as Ivan Chai or the Russian tea, or Kaporie Chai. At one point in time, Rosebay Willowherb was very popular in Britain. Its taste is reported to have been more popular than the classic black tea in the late 19th Century. After the October Revolution of 1917 in Russia, the commercial production of Ivan Chai stopped.
collection and preparation:
Rosebay Willowherb is collected in non-polluted environment in the forests and meadows of Latvia. Leaves are picked when the Rosebay Willowherb is at the beginning of its flowering season and then fermented at a certain temperature until a strong sweet fruity flavour is obtained, then dried. The fermentation process increases the beneficial properties of the plant. Among its active ingredients there are flavonoids, gallic acid derivatives, mucilage, oleanolic acid, ursolic acid and sugars, it is also rich in vitamin A, vitamin C. The greens of the willowherb also contain protein that is easily and quickly absorbed. In scientific laboratory studies that were carried out in Russia it was discovered that 100 grams of tea contain 2.3 mg iron, 2.3 mg copper, 1,3 mg nickel, 16 mg manganese, 0.44 mg molybdenum, 6 mg boron, 1.3 mg titanium etc. It is an incredible composition of micronutrients with a wide range of therapeutic properties.

Fermented Rosebay Willowherb tea is regarded as a very useful resource in herbal medicine, especially considering its virtually total lack of side effects. It has anti-inflammatory, soothing and astringent properties that may significantly help in treatment of stomach diseases. Ivan Chai is recommended in cases of gastritis, colitis, gastric ulcers, flatulence, diarrhea, anemia, headache and epilepsy. It is used in cardiology and neurology. This tea contains 6.5 times more vitamin C than a lemon. “Ivan Chai” is suitable for increasing the potency, in cases of urogenital system diseases (an effective remedy for benign prostatic hypertrophy), it accelerates the closing of gastric ulcers and duodenal ulcers, helps to increase immunity against respiratory virus infections, is good in prevention of caries, improves blood composition and normalizes blood pressure, neutralizes food and alcohol poisoning, helps to raise the energy, rejuvenate the body, lower fatigue, and improve endurance, a remedy for liver, kidney and spleen diseases, can also be used externally in case of dermatosis or simply as skin cleanser and hair root strengthener.
how to brew Willowherb tea:
Place 2 teaspoons of tea in a teapot and pour 450 ml of boiling water over the tea. Steep tea for 10 minutes. You can also keep the infusion (up to 3 days) and drink it later diluted. Tea may be sweetened with honey this will make it especially delicious.
for energy and liveliness:
The recipe for energy and liveliness: mix 1 dessert spoon of “Ivan Chai” with 1 teaspoon of fresh grated ginger root, 1 teaspoon of ground caraway-seeds, 1/2 teaspoon of ground coriander seeds, a pinch of ground cardamom . Pour over 400 ml of boiling water. Steep tea for 10 minutes, add milk, sugar or honey to your taste.
